Once the vows are taken, the meal is eaten and the toasting is done, the sweet end to a wedding day is yet to come. And with endless possibilities, dessert can be the tastiest part of the celebration. With the popularity of television shows such as "Cake Boss," "Ace of Cakes" and "Amazing Wedding Cakes," couples are excited about what their cake will look like. Bold, contrasting colors, odd shapes and unique textures make the wedding cake business challenging but enjoyable, according to Becky Palermo, co-owner of Tinley Park's Creative Cakes.
"I really have fun being surprised myself in the outcome of designs," Palermo says.

Piece of Cake

Tinley bakery puts icing on Hizzoner's bash Mayor Richard M. Daley's 67th birthday bash began at Creative Cakes in Tinley Park. The bakery was commissioned to make the cake for the celebration at U.S. Cellular Field April 24.
Beth Fahey, co-owner with her sister Becky Palermo, said the bakery created a full sheet side-by-side cake, half chocolate cake with chocolate mousse and half white cake with raspberry mousse. They also designed a small stadium cake for the Mayor.
The photos show Fran Leon (left) decorating the sheet cake with a cityscape design, and, of course a Sox logo, while Becky Palermo puts the finishing touches on the stadium cake (top, right).

Creative businesses put imagination to work

Creative minds in Tinley Park and Orland Park have set up shop to offer unique businesses that sell experiences to remember. These businesses are only a sample of what the south suburbs have to offer.
Please the eye, palate Becky Palermo and Beth Fahey, the sister team running Creative Cakes at 16649 Oak Park Ave. in Tinley Park, make everything from blue and white Tiffany jewelry boxes to Prada purses and designer shoes - as cakes.
"What we do is try to understand what the event is, what the client's budget is, and give them something that is a centerpiece at their event," Palermo said.
Enchanting decorating styles take an ordinary wedding cake and create a mood using items like orchids or castles as inspiration.
While Palermo and Fahey have been awarded for their ornate designs, taste is of the utmost importance to them. The sisters use a light Italian-style meringue buttercream recipe and an intense chocolate ganache to ice their cakes.
They also mix their folio of delectables with cream puffs, swans, elcairs and fresh fruit tarts to tempt the most discerning palates. |

Baking up a forest at Creative Cakes

Each Christmas Eve morning, Creative Cakes bakery in Tinley Park is transformed into a buche de noel assembly line. With 30 to 40 orders for the traditional holiday yule log, the bakers get to work rolling the sponge cake, spreading the icing and decorating with sugar flowers and meringue mushrooms. We recently went behind the scenes to watch owners Beth Fahey and Becky Palermo make one of those popular cakes.
